Chicken Croquettes: perfect for a light dinner and easy to make

Generally, Croquettes are breaded bundles of vegetables or meat held together by a thick white sauce or béchamel and deep-fried. However, chicken croquettes are different for they are shaped, breaded and baked, making them lower in fat than traditional deep-fried croquettes. Because the deep fry is taken out of the equation, thereby making them a healthier choice than the traditional ones. Although, you can also try making them the same way but the taste might be compromised and you might have to add tonnes of butter just to undo that. So, what’s the point of baking then? None.

Prepare these easy chicken croquettes a few hours ahead of time, so that the mixture will have plenty of time to chill and firm up before being formed and baked. Serve them with a medium béchamel sauce, also known as a white sauce and mashed potatoes for a wholesome meal.

Chicken Croquettes Recipe

Ingredients

Panko: ½ Cup

Flour: ¼ Cup

Green Bell Pepper, Chopped: ¼ Cup

Red Bell Pepper, Chopped: ¼ Cup

Garlic Powder: ½ Teaspoon

Salt: ½ Teaspoon

Pepper: ¼ Teaspoon

Large egg, lightly beaten: 1 Pcs

Mayonnaise: ¼ Cup

Worcestershire: 1 Tablespoon

Cilantro, Chopped: ¼ Cup

Directions

  1. Take a large bowl and mix all the ingredients until smooth.
  2. Now heat oil on a large skillet over medium to high heat to deep fry the croquettes,
  3. Shape the chicken croquettes mixture into about eight 2 1/2-inch balls. Pat the croquettes balls to form an oval shape.
  4. Fry the croquettes in the oil until golden brown on both sides.

Baked Chicken Croquettes

Ingredients

Butter: 5 Tablespoons

All-Purpose Flour: 3 Tablespoons

Milk: ½ Cup

Chicken Broth: ½ Cup

Chicken, Cooked and finely Chopped: 2 Cups

Fine dry bread crumbs: 1 ¼ Cup

Parsley, freshly chopped: 3 Tablespoons

Salt: ¼ Teaspoon

Large eggs, lightly beaten: 2 Pcs

Parmesan Cheese, grated: ¼ Cup

Directions

  1. Gather the ingredients. And then take a medium saucepan, melt 3 tablespoons of the butter over medium heat.
  2. Now, add flour and cook, stirring occasionally for about 1 to 2 minutes without browning to make the roux. 
  3. Gradually whisk in the milk and broth to the flour and cook, stirring constantly, until the mixture is smooth and thickened.
  4. Remove the saucepan from the heat and let cool for 5 to 10 minutes.
  5. Now take a large bowl, combine the chopped cooked chicken, bread crumbs, parsley, salt, and eggs and mix well. Pour over the cooled sauce from the saucepan and stir to blend thoroughly. Cover and let it chill for about 2 hours.
  6. Preheat oven at 350 F and mix the Parmesan cheese and remaining 1/4 cup of bread crumbs in a shallow dish to shape the chicken croquettes mixture into about eight 2 1/2-inch balls. Pat the croquettes balls to form an oval shape.
  7. Now dip the shaped croquettes in bread crumb mixture, to coat them with the mixture.
  8. Arrange the croquettes in a greased baking dish and melt the remaining of 2 tablespoons of the butter to drizzle over the chicken croquettes.
  9. Bake for 30 minutes until golden brown and serve with white sauce and mashed potatoes.

Leftover Chicken Croquettes

Ingredients

Chicken meat, finely chopped and cooked: 3 Cups

Seasoned dry breads crumps: 1 ½ cups

Eggs, lightly beaten: 2 Pcs

Onions, chopped and sautéed: 2 Cups

Parsley, fresh and chopped: 1 Tablespoon

Salt: 1 Teaspoon

Ground Black Pepper: ½ Teaspoon

Directions

  1. Take a large bowl and mix all the ingredients until smooth.
